Taj Coromandel, Chennai marked the beginning of the festive season with its much-anticipated annual Cake Mixing Ceremony – an enduring tradition that brings together guests and hotel associates in a spirited celebration of warmth, cheer and togetherness. The venue transformed into a festive haven, as participants donning aprons and Santa caps gathered around the long table laden with a rich selection of ingredients, ready to usher in the magic of Christmas.
This year’s ceremony featured the grand mixing of approximately 1000 kilograms of exquisite dry fruits and nuts, including raisins, black currants, dates, figs, almonds, cashew nuts, tutty-fruity, red currants, and dried cherries. These were blended with aromatic spices such as 5 kilograms each of cinnamon and ginger powder, along with 15 kilograms of ground spices. The lavish mélange was generously infused with 250 litres of spirits, forming the base for the hotel’s signature Christmas cakes and desserts. These fruits will now be sealed and soaked for one year to develop their distinctive depth and richness.
The fruits that were soaked last year will now be used to bake an array of festive cakes and goodies, which will be available at La Patisserie at Taj Coromandel – Chennai’s favourite Cake Shop & Delicatessen for connoisseurs of fine desserts.
Sharing his thoughts on this occasion, Ian Dubier, Area Director Operations – Tamil Nadu & General Manager – Taj Coromandel, Chennai said, “The cake mixing ceremony at Taj Coromandel is more than a ritual – it is a joyful reminder of community, celebration and the festive spirit that unites us each year. After the mixing process, the carefully prepared mixture will be sealed in airtight casks, allowing their flavours to deepen before they are used to craft our signature festive treats.”
Following the ceremonious mixing, guests were treated to an elegant evening of gourmet delights. The savoury spread showcased indulgent creations such as Goat Cheese and Prawn Tartlets with Fig Jam; Smoked Salmon and Avocado Crostini; Chicken Liver and Fig Tartlets; and festive favourites like Santa’s Little Helper Sliders. Vegetarian guests savoured offerings including Brie and Cranberry Filo Bites; Truffle-infused Artichoke and Sun-dried Tomato Quiche; Mini Caprese Skewers; and Reindeer Mushroom Tartlets.
The dessert selection from the Noel Nosh Bar showcased exquisite creations such as Orange CinnamonNovelty Candles; the much-loved Sweet Ginger Home; and the classic Buche de Noel. Guests also enjoyed festive favourites including Christmas Cake; Plum Pudding with Brandy Sabayon; assorted cookies; Belgian dark milk & white chocolate slabs, and a curated selection of signature pralines.
